Pour a glass of good sake and hold it up to the light. That transparency looks effortless, yet it takes weeks of quiet work. So what is Orisage? Orisage (滓下げ) is the clarification step brewers carry out before bottling. It settles the fine proteins and colloids that would otherwise cloud the sake during storage. Brewers then move the bright liquid above into another tank. The name means, roughly, “lowering the lees.” Many English guides blur this step with Oribiki (滓引き), the earlier racking stage. The two genuinely differ. Oribiki handles the coarse sediment that drops soon after pressing. Orisage targets the microscopic material that clouds sake much later, often after heating and months in a tank. Why bother at all? A faint cloud is usually harmless to the drinker. It does worry the person holding the bottle in a shop, and that reaction drives the entire practice. Clarity has signalled quality in Japan since the Manyo era, when writers praised sumizake, or “clear sake.” A note on wording first.
